{Recipes} No Bake Nutella Cheesecakes

T.G.I.F! Yes, it's Friday and for some of us that means let loose! Or at least for me it usually means stock up on sweets, which is why when I stumbled upon this recipe, I couldn't help but share it with you. I have yet to try it out but rest assured that I will definitely be whipping up some No Bake Nutella Cheesecakes sometime this weekend.

Yield: 4-6 servings

Prep Time: 15 minutes

Ingredients:

For the Crust

12 Oreo Cookies, crushed into crumbs
3 tablespoons unsalted butter, melted

For the Filling

1 (8 ounce) package cream cheese, softened
2/3 cup Nutella
1 teaspoon pure vanilla extract
1 (8 ounce) tub frozen whipped topping, thawed

For the Garnish

whipped topping, optional
chocolate shavings, optional
toasted, chopped hazelnuts, optional

Directions:

1. In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
2. In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.
3. Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
4. If desired, garnish with additional whipped topping, chocolate shavings, and/or toasted, chopped hazelnuts.

Look Ma, No Hands...

As you all may already know, #FebPhotoaDay has commenced and yesterday was Day 3 which meant that our inspirational word was HANDS! Don't ask me why, but I was extremely excited about this one because I just happened to be wearing all of my favorite rings last night. From left to right, here's a breakdown of what's going on up there... David Yurman - this one was a gift given to me a few years ago and it's just one of those things that I've never taken off since then. Vintage Knuckle Ring - I found this beauty in my mom's jewelry chest which was given to her back in the 70's as gift. Nashelle - this one is an intricate piece that I just can't live with out. Tiffany & Co - again another gift. It's a simple silver band that says I Love You, another one that I just can't take off. Vintage - yet again another bauble from my mom's jewelry chest.

PS. I Have a Side Note
So I dyed my hair! I know it doesn't sound exciting but trust me it is! I've been dying to get the Ombre look but have never wanted to fork up the money to get it professionally done. Well last weekend I conjured up enough guts to do it myself. Yes, I DIYed my hair and I love it! Don't worry, I'll show you how to do it yourself too soon!
